Itâ€™s that time again, time for Thankful Thursday! For those wondering what that is, in a nutshell, itâ€™s a blog post all about the things Iâ€™ve currently thankful for. At the end, you are more than welcome to comment with what youâ€™re thankful for this week. I’d love to hear about them.
Iâ€™m thankful for my mom. This past Sunday was Motherâ€™s Day as you know, and I made my mom a cake from scratch. My first cake that Iâ€™ve ever made and it was for mom. It came out good (a little flatter than I would have liked, which is what happens when you donâ€™t have a hand mixer), and mom loved it. It was so great spending the day with her. Sheâ€™s one of the most important people in my life and I love her like crazy.
I’m thankful for Freekeh. It’s an awesome grain like rice or quinoa that I’ve been introduced to. In a word, it’s awesome. It’s healthy and good for you and only 140 calories per serving. Good stuff all around! Have I mentioned lately that I’ve been loving cooking and trying out new recipes and such?
Iâ€™m thankful for The Avengers. Okay, so this may sound silly, but really itâ€™s just a geek thing. I was so inspired by this movie and enjoyed it so much that I feel like inspiration has entered my life (see my blog post on Inspiration). Or, it has re-entered my life because Iâ€™ve felt this inspired and motivated before, itâ€™s just been far too long.
Iâ€™m thankful for Austinâ€™s Coffee. I had been passing by this little â€œhole in the wallâ€ coffee place since I moved into my new place in April and finally stopped to check it out. Wow, is it awesome. Really takes me back to Asheville (my all-time favorite place). If I canâ€™t have Asheville right now, this is definitely going to become a place I can come to in the meanwhile. Itâ€™s vegan friendly too which makes it even better.
I’m thankful for my birds. I love hearing them sing every morning while I get ready for work and seeing them when I get home at night from work. They are so sweet and the loves of my life (they are like my kids). They can make me smile even when I’ve had a so-so day.
