I couldn’t resist that title. Something inside of me wanted to write it. 🙂 That said, I’m seeking to do a trial run of going gluten-free. I’m hoping to start on Monday (got another crazy weekend ahead of me with races and such), but I’ve got my work set out for me in the research department.
So far, my list of go-to foods are probably going to be:
Fresh veggies & fruit
Oatmeal (GF of course)
Rice cakes (maybe, been awhile since I’ve eaten them)
I’m thinking some bean burritos will definitely be a favorite as I already love them. More salads with tofu mixed in for protein and Soups, and Stir-fry dinners with tofu and veggies. Being vegan, I don’t see this change as being more difficult, but it could be a challenge. With lots of resources online though, I think it is definitely easier.
Are you gluten-free? I’d love any advice or tips you might have! I’m hoping this transition helps me with my stomach issues. Apparently, gluten sensitivity can go hand-in with Thyroid issues.
